Coconut Vanilla Chia Pudding

  • 2 cups fresh almond milk
  • 2 tbsp coconut palm sugar (or substitute dehydrated cane)
  • 1/2 tsp vanilla extract

  • 2 tbsp shredded coconut (optional)


  1. Mix together almond milk, sugar, and vanilla until combined.
  2. Stir in chia seeds. Let them swell for about 20-30 minutes, stirring constantly.
