- 1⁄2 cup water
- 1 cup lemon juice
- 4 Tbsp. lemon zest
- 2 Tbsp. organic honey or Stevia
- 2/3 cup extra-virgin olive oil
- 2 Tbsp. Dijon mustard
- 4 Tbsp. dill, chopped
- 2 Tbsp. shallots, minced
In a blender, blend all ingredients until well mixed. Add salt and pepper to taste.
