Cajun Jambalaya


Try this delicious, Cajun Jambalaya for a healthy, balanced meal that while help you achieve optimal health! It’s loaded with healthy proteins and vegetables so you can look and feel your best. Enjoy!


  • 14 oz. boneless, skinless chicken breast, diced
  • 1 red onion, diced
  • 1⁄2 tsp. garlic, minced
  • 14 oz. can no salt added tomatoes with juice, chopped
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1⁄2 cup frozen corn kernels
  • 2 tsp. hot sauce
  • 2 tsp. chili powder
  • 1⁄2 tsp. dried oregano
  • Fresh ground pepper
  • 2 1⁄2 cup low-sodium chicken stock
  • 1 1⁄2 cup brown rice
  • 3⁄4 cup frozen peas
  • 1 tsp. paprika
  • 3 1⁄2 Tbsp. parsley, chopped
  • 1⁄2 tsp. red pepper flakes


Put chicken, onion, garlic, chicken stock, tomatoes with juice, and rice into a large pan. Add the chili powder, paprika, oregano, and red pepper flakes, and stir well. Bring to a boil then reduce heat, cover, and let simmer for 25 minutes.

Add the peppers, corn, and peas to the rice mixture and return to a boil. Reduce heat, cover, and let simmer for an additional 10 minutes until rice is tender.

Stir 2 Tbsp. of parsley and season to taste with pepper. Garnish with remaining parsley.
