- 14 oz. boneless, skinless chicken breast, diced
- 1 red onion, diced
- 1⁄2 tsp. garlic, minced
- 14 oz. can no salt added tomatoes with juice, chopped
- 1 red pepper, diced
- 1 yellow pepper, diced
- 1⁄2 cup frozen corn kernels
- 2 tsp. hot sauce
- 2 tsp. chili powder
- 1⁄2 tsp. dried oregano
- Fresh ground pepper
- 2 1⁄2 cup low-sodium chicken stock
- 1 1⁄2 cup brown rice
- 3⁄4 cup frozen peas
- 1 tsp. paprika
- 3 1⁄2 Tbsp. parsley, chopped
- 1⁄2 tsp. red pepper flakes
Put chicken, onion, garlic, chicken stock, tomatoes with juice, and rice into a large pan. Add the chili powder, paprika, oregano, and red pepper flakes, and stir well. Bring to a boil then reduce heat, cover, and let simmer for 25 minutes.
Add the peppers, corn, and peas to the rice mixture and return to a boil. Reduce heat, cover, and let simmer for an additional 10 minutes until rice is tender.
Stir 2 Tbsp. of parsley and season to taste with pepper. Garnish with remaining parsley.
