- Spicy Shrimp Ingredients:
- 15-20 shrimp, peeled and deveined
- 1⁄2 tsp paprika
- 1⁄2 tsp cumin
- 1⁄2 tsp hot chili powder
- 1⁄2 tsp Ground pepper
- 1⁄2 Tbsp. olive oil
- 1⁄2 lime, juiced
- 1 scallion, chopped
- 1⁄2 cup baby arugula
- 2 Roma tomatoes, diced
- 1 head Romaine lettuce (leave whole)
Jalapeño Avocado Sauce Ingredients:
- 1 avocado
- 1 clove garlic
- 1 jalapeño, seeded and chopped
- 1⁄2 lime, juiced 1 Tbsp. chopped cilantro
In a large bowl combine shrimp, paprika, cumin, chili powder, and ground pepper.
In a skillet, sauté shrimp in olive oil on medium heat for about 3 minutes (shrimp should turn pink). Squeezed 1⁄2 lime over top of shrimp while cooking.
In a blender combine all sauce ingredients and blend until smooth.
On a large lettuce leaf, place arugula, shrimp, scallions, tomato and sauce.
